Extreme Chocolate Cake


  • 2 c. white sugar
  • 1 3/4 c. flour
  • 3/4 c. unsweetened cocoa powder
  • 1 1/2 tsp. baking soda
  • 1 1/2 tsp. baking powder
  • 1 tsp. salt
  • 2 eggs
  • 1 c. milk
  • 1/2 c. vegatable oil
  • 2 tsp. vanilla


*Frosting:

  • 3/4 c. butter
  • 1 1/2 c. unsweetened cocoa powder 
  • 5 1/3 c. confectioner's sugar
  • 2/3 c. milk
  • 1 tsp. vanilla extract


Preheat over to 350 degrees. Grease and flour two 9 inch cake pans. Line the bottom of the pan with parchment, after you've greased and floured it.

Stir together sugar, flour, cocoa, baking soda, baking powder, and salt. Add eggs, milk, oil, and vanilla. Mix for 3 minutes. Stir in boiling water by hand. Pour into the two prepared pans.

Bake for 30-35 minutes. Cool for 10 minutes before removing from pans to cool completely.

Frosting:
Cream butter until light and fluffy. In separate bowl combine cocoa and confectioner's sugar. Alternate adding this mixture and milk and vanilla into the creamed butter. Beat to a spreading consistency.

Split the cakes horizontally. Covering each layer with frosting. Frost top and outside.
