Honey Garlic Chicken

 

4 Chicken Breasts
1/2 Cup Honey
1/2 Cup Soy Sauce
1/4 Cup Water
2 Tbsp Apple Cider Vinegar (Or rice vinegar)
1 Tbsp Minced Garlic


  1. Spray your crockpot with non-stick spray or line with a slow-cooker liner.
  2. Mix honey, soy sauce, water, vinegar and garlic in a bowl
  3. Place chicken breasts in crockpot
  4. Pour the sauce over chicken
  5. Set crockpot for 8 hours, chicken typically done in 5-6 hours.

Cowboy Cookies

 3/4 cup butter melted¹

1 ½ cups light brown sugar packed

1 large egg

1 egg yolk

1 teaspoon vanilla extract

1 ¾ cups all-purpose flour²

3/4 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon table salt

1 ½ cups old-fashioned oats

4 ounces semisweet mini chocolate chips

1 cup shredded coconut

1 cup chopped pecans


Preheat oven to 350 F. Line baking sheets with parchment paper or silicone baking mats. Set aside. 

Add the melted butter and brown sugar to a large mixing bowl, and whisk until well-combined.

Whisk in the egg, egg yolk, and vanilla until well-combined. 

Add the flour, baking powder, baking soda, and salt. Whisk in until just combined. 

Whisk in the oats just until incorporated. 

Add the baking chocolate, pecans, and coconut, and whisk in until combined. 

Drop by 1.5 tablespoon scoops (medium cookie scoops) 2 inches apart on prepared baking sheet. 

Bake 8-14 minutes. The cookies should be light golden brown at the edges but look underdone in the middle. This will help to keep them soft and chewy

Gnocchi Soup

16 oz. - Potato Gnocchi 

2 cups - Spinach chopped

1 cup - Carrots chopped into small pieces

1/2 cup - Celery

1 tsp - Garlic grated

3/4 cup - Onion

3 strings Fresh Thyme

1/2 tsp - Black pepper powder

1 cup - Heavy cream

1 1/2 tbsp - Butter

3 cups - low sodium vegetable broth

Salt to taste

1 - bay leaf

1 tsp - Italian seasoning


Heat butter in a large pot over medium heat. Add garlic, bay leaf, onion, celery, and carrots and sauté until veggies are softened (approx. 10 minutes).

Add veggie broth, thyme, and seasoning to veggies. Bring to a boil.

Add gnocchi and simmer on low for 10 minutes, stirring occasionally

Now add spinach and heavy cream. Cook them for about 2 minutes and switch off the flame.

Taste to adjust seasonings.

Creamy Ground Beef and Macaroni Tomato Soup

 1 pound lean ground beef

1 onion (diced)

3 teaspoons minced garlic

2 teaspoons salt

1/4 teaspoon pepper

1 teaspoon oregano

4 cups chicken stock

1 (26 ounce) jar spaghetti sauce

1 (14.5 ounce) can diced tomatoes (drained)

1 (4 ounce) package cream cheese (room temperature)

1/4 cup fresh chopped basil (divided)

1 1/2 cups whole wheat elbow macaroni


In a large skillet over medium heat, add the ground beef and onion and cook until the beef is no longer pink. Add in garlic and cook for a minute more.

Add salt, pepper and oregano to the beef and stir to combine.

Pour in chicken stock, spaghetti sauce, and diced tomatoes, then bring the soup to a simmer and cook for 10 minutes.

Whisk in the cream cheese until it is completely mixed in and then add 1/2 of the fresh basil.

Pour in the pasta, stir and let cook for another 10 minutes with the lid on or until the pasta is tender.

Spoon into bowls and garnish with the leftover basil.

Spaghetti Casserole

 16 ounces dried spaghetti noodles

1 large yellow onion chopped

4-6 cloves garlic minced

1 ½ pounds sweet Italian sausage casing removed

3 teaspoons dried Italian seasoning divided

48 ounces spaghetti sauce 2 jars, divided

8 ounces cottage cheese or ricotta cheese

8 ounces cream cheese at room temperature

1/4 cup sour cream

3 cups mozzarella shredded, divided

1/2 cup butter cut into slices, divided


Preheat oven to 350°F.

Bring a large pot of salted water to a boil. Cook pasta according to package, drain well and return pasta to original pot. Add 1 jar of prepared spaghetti sauce and combine. Set aside.

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add onion and garlic and cook until they begin to soften, about 5 minutes. Add sausage and 2 teaspoons Italian Seasoning to skillet, and cook until no pink remains. Drain well. Add 1 jar of spaghetti sauce to skillet. Set aside.

In a medium mixing bowl, combine Cottage cheese or ricotta cheese, cream cheese, sour cream, 1 cup mozzarella, and 1 teaspoon Italian seasoning. Set aside.

Place half the slices of butter in a 9x13 baking dish. Spread half the spaghetti in dish, then spread cheese mixture evenly over spaghetti. Spread remaining spaghetti over cheese mixture. Top with the remaining butter slices.Pour tomato meat sauce evenly over top layer of spaghetti.

Top with remaining mozzarella and bake in preheated oven until casserole is heated through, about 35-45 minutes

Oatmeal Chocolate Chip Cookie Bars

 

Ingredients

  • 1 cup butter , room temperature
  • 1 cup light brown sugar , packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 1/2 cups all-purpose flour
  • 2 cups old-fashioned rolled oats
  • 2 cups chocolate chips semi-sweet or milk chocolate

Instructions

  • Preheat oven to 350 degrees F. Lightly grease a 9 x 13 in. pan with cooking spray.
  • In a large mixing bowl beat together the butter, brown sugar, and white sugar until smooth and light.
  • Add the eggs one at a time, mixing after each addition. Add the vanilla.
  • In a separate bowl combine the dry ingredients: salt, baking soda, baking powder, flour, rolled oats, and 1 cup chocolate chips.
  • Add to the butter mixture and stir until combined. 
  • Spread 1/2 of the cookie dough into the bottom of the prepared pan. Sprinkle remaining cup of chocolate chips on top. 
  • Carefully press remaining cookie mixture on top of chocolate. Bake for 25 to 30 minutes or until golden brown. Allow to cool completely before cutting.

Shrimp Pasta With Creamy Mozzarella Sauce Recipe

 

  • 8 oz penne pasta
  • 2 tbsp olive oil
  • 1 pound shrimp
  • 4 cloves garlic
  • 1/4 tsp salt
  • 1 cup half and half
  • 1 cup mozzarella cheese, shredded
  • 1 tbsp dried basil
  • 1/4 tsp red pepper flakes
  • 1/8 tsp paprika
  • 1/4 tsp salt
  • 1/2 cup reserved cooked pasta water



  • Cook pasta according to package instructions. Reserve some cooked pasta water. Drain the pasta.

  • Heat 2 tablespoons olive oil in a large skillet on medium-high heat. Add shrimp, minced garlic and cook the shrimp on one side for about 1 minute, until shrimp turns pink or golden brown on that side. While it cooks, sprinkle the top of shrimp with salt to cover every single shrimp. Make sure not to crowd the shrimp in the skillet, otherwise, moisture will form and shrimp won't sear right. After 1 minute, Flip the shrimp over to the other side and cook for about 30 seconds or 1 minute more. The shrimp should be golden color or pink on both sides and not overcooked.

  • Remove the shrimp to a plate, being careful to leave all the oil in the skillet.

  • To the same skillet and more minced garlic, and saute in olive oil (remaining from shrimp) on medium heat, stirring, for 1 minute until the garlic is fragrant. The skillet should be hot.

  • Add half and half to the hot skillet with sun-dried tomatoes and bring to boil. Add shredded cheese to the skillet, and stir in while boiling. Immediately reduce to simmer and cook, constantly stirring, until all the cheese melts and the creamy sauce forms. If the sauce is too thick, add a small amount of half and half or reserved cooked pasta water. Add basil, crushed red pepper flakes, paprika. Stir.

  • Add 1/4 teaspoon of salt gradually, stirring on low heat and tasting (you might need slightly less than 1/4 teaspoon).

  • Add cooked pasta to the sauce, and reheat gently on medium heat. Add the cooked shrimp, stir it in. Taste, and add more salt, if needed. Add a small amount of half and half or reserved cooked pasta water, if the sauce is too thick. Let everything simmer on low heat for a couple of minutes for flavors to combine.

Hawaiian Delight Pie

 1/3 cup butter or margarine, melted

1 1/2 cups sugar

3 extra-large eggs

2 tablespoons all-purpose flour

2 tablespoons cornmeal

1 1/4 cups drained canned crushed pineapple

1 1/4 cups flaked coconut

1 teaspoon vanilla

1 unbaked 9-inch pie shell


Heat oven to 350 degrees.

In medium bowl, beat together butter, sugar, eggs, flour, and cornmeal until well blended.

Add pineapple, coconut, and vanilla. Mix well. Pour into pie shell

Bake 45 minutes or until toothpick comes out almost clean. Filling will be very moist.
